    Yes, it is possible.

A piggy-back question.  As I understand it, Jama allows a project-wide Replace with baseline.  Is there a converse project-wide of Replace with current?  The online help references the term "Replace with current", but I have not found such a project-wide feature.  So far I am only aware of doing this at the individual item level using Make Current feature.

Additionally is there a mechanism to selectively pick which items to restore to a baseline, when the project-wide Replace with current operation is performed?

I've never seen a project-wide option like that and I wouldn't think there is.  The versions of the items you see in each project are the "current" version.  I've never done a "replace with baseline" but if it works the same as "make current" for individual items, it's going to create a new version of the item(s) with the content from the baseline.  That new version becomes the current version for each item.  The version that had been current prior to the replace then becomes a previous version.
